Ingredients
2 lbs chicken cut in small portions
2 tablespoons vegetable oil or margarine
1 tablespoon soy sauce
Salt and pepper to taste
4 ½ cups water
tablespoon of sugar
¼ cup minced onions
3 clove garlic (finely chopped)
¼ cup celery stalks
¼ cup chopped tomatoes
1 scotch bonnet pepper
Direction:
1. Heat oil and add sugar ensuring it becomes dark caramelized
2. Add chicken
3. Stir and cook for 20 minutes in covered saucepan over medium
4. Add water and remaining ingredients
5. Stir and bring to a boil
6. Let pelau simmer when water has evaporated |
